August is the time of the new crop of hazelnuts. Let's try making nut desserts.
In August, there are always a lot of new crop nuts on the market. Crushed nuts can serve as a base for dough, in which they replace flour. Try making cake and cookies
Hazelnut cookies: Dry 120 g of shelled nuts in the oven for 15 minutes. Grind 100 g in a blender along with 40 g of brown sugar. Add ½h. spoons of vanilla concentrate and 1 protein, mix in a blender. Whisk another egg white, carefully fold into the nut mixture. Spoon the nut batter onto a baking sheet lined with baking paper, sprinkle with the remaining crushed nuts and bake for 10-15 minutes at 200ºC.
Cake layers: For the nut dough you will need: 7 egg whites, a pinch of s alt, 200 g chopped hazelnuts, 100 g sifted powdered sugar. Beat the whites with sugar and a pinch of s alt until fluffy foam, pour the chopped nuts into the protein mass and gently (moving from the bottom up, towards you) mix, trying to prevent the protein from settling. Put the resulting mass in two identical forms (cooking rings) and bake at 180ºC for about 30 minutes. Choose the filling according to your taste.
