1. Salad with watermelon and fetax
Seed the dense pulp of watermelon, cut into large cubes, add fetax cubes (slightly smaller) and mint leaves, mix gently. Drizzle liquid honey over the salad and serve.
2. Shopska salad
Slice tomatoes, cucumbers, red onions, peppers, lay out in layers on a plate, adding parsley. Dress the salad with olive oil and wine vinegar, top with diced fetax.
3. Baked vegetable salad
Grill or pan fry eggplant, tomato, bell pepper and zucchini pieces. Arrange the roasted vegetables on a serving platter, alternating with the sliced feta cheese and basil leaves. Season lightly with olive oil and balsamic vinegar.
4. Puree soup
Make a vegetable soup with pumpkin or cauliflower, puree it in a blender, add cream, mix and serve, decorating the plates with fetax cubes.
